This plant-based, Vegan Ceviche is made with hearts of palm (instead of fish) along with colorful ingredients- tomato, red & green peppers, lemon juice, onion is optional. It is a very easy recipe that can be whipped up in minutes! Serve it on mini tostadas, GF crackers, as a snack, as a side dish or lettuce cups.
Step 1: Chop heart of palm, set at the side in a bowl.
Step 2: Cook Asparagus for 2 min and chop them.
Step 3: Remove tomatoes seeds chop into a small size.
Step 4: Mince red & green peppers.
Step 5: Splash lemon, drizzle with olive oil and and salt.
Step 6: (optional): Add onion and quinoa. Mix well, serve and enjoy this refreshing and nutritional dish!
Ingredients:
7 hearts of palm, 4 asparagus, 6 grape tomatoes or 1 large tomato, 2 tablespoons chopped of red peppers and 2 of green peppers, juice of a yellow lemon, 2 teaspoons of olive oil, pink salt enthusiasm.
1 tablespoon of finely chopped onion is optional as well as 1/3 cup of quinoa that I add at the end to make it a more complete dish since quinoa is a source of protein.
