Eggplant lovers, here is a delicious, vegetarian, versatile, healthy and gluten free recipe. Plus, it’s very absorbent and soaks up seasonings well, making it a hearty, flavorful ingredient to use in vegan dishes.
Ingredients:
2 small eggplants
2 shredded garlic cloves
1/2 teaspoon pink salt
Pinch of black pepper
4 tablespoons olive oil
Procedure:
~Set the oven to 350
~Place parchment paper on a baking tray
~Shred the garlic, add olive oil, salt and pepper. Mix well.
~Slice the eggplant crosswise to make circles. ~Brush them with the mix of garlic and olive oil.
~Place the eggplant in the tray, don’t forget to put the parchment paper
~Bake them for 20 min until soft.
This recipe is versatile, I use to make wraps, sandwich, as a side, on salads also as a dip like Baba Ganoush.
