Who doesn’t’ Love pasta? but not everyone can eat pasta, some people have gluten sensitivity, have celiac disease or just don’t want to gain weight. But this is a pasta everyone can eat without remorse, it is a gluten free, vegetarian and delectable dish.
Here are the ingredients:
1 cup cherry tomatoes cut in half
2 tablespoons minced onion
½ cup of broccoli; cut in small pieces
½ cup of zucchini; diced or Julienne style
1 tablespoon of olive oil
Pinch salt and black pepper
1 teaspoon minced fresh herbs like rosemary and basil.
5-7 chopped kalamata olives
1 cup of arugula
2 tablespoon of goat feta cheese is optional
12 oz of penne pasta by Barilla. This brand of gluten free pasta holds up very well to being boiled then baked – I recommend!
Procedure:
Preheat the oven to 350 degree.
Meanwhile, bring a large pot of water to a boil then add one tablespoon of pink salt (Add pasta, then cook until pasta is al dente and drain.
Add onions, olive oil and tomatoes into a square Pyrex baking pan. Put in the oven and bake until tomatoes burst. Add a pinch of salt and pepper mix well.
Add cooked pasta, broccoli, zucchini, olives, fresh herbs, and goat cheese (optional) into the tomatoes. Mix and cover with aluminum foil and bake for 7 min at 350.
Place the arugula (washed) on plate then add the baked pasta on top and enjoy. It’s amazingly delicious!
